Ayarza is a deeply fruited, winey coffee from the Ayarza region of South East Guatemala, cultivated by Cooperativa El Porvenir, representing nine dedicated farming families. The natural process begins with ripe cherries soaked for 50 hours, followed by 11 days of slow drying on concrete patios. This careful approach brings out intense fruit flavors and a candied sweetness with a wine-like character. Grown at 1800 meters and processed at 1500 meters, this coffee showcases the unique environment and meticulous care of the cooperative’s farmers, producing a rich, vibrant cup.
